How to make powdered sugar at home because of the famous Ted Lasso biscuits

If it’s a rainy day in Seattle or if there’s a crisis, of course we bake. So this stormy morning, post flu-shot and feeling the doom and gloom of this never-ending 2020 saga I ordered my groceries online and was inspired to bake. We watched a bit of the Sounders match last night and that reminded me of Ted Lasso (are you watching? Ted Lasso is Life!!!) and that reminded me of the famous Ted Lasso biscuits and the recipe I found on the Kitchn that I’ve been meaning to try. And then I realized that we had only 1/4 cup of icing sugar where I needed 3/4 cup and I had just ordered groceries so a grocery store trip was not an option.

So can you make powdered sugar at home?


Yes you can. You just need two ingredients and a blender: corn starch and sugar. I used this recipe that came up first in my google search. I divided it in two and then in half again and made only the 1/2 cup I needed. I don’t even have a real blender, I’ve always loved this hand blender thing but maybe one of these days I’ll give in and get a real Vitamix one . And yes, once I finished blending the sugar and cornstarch for about 4-5 minutes I mixed it with the other stuff I had and they almost looked the same. (The store bought stuff might have been a bit more corn-starchy, but I’m not sure.)

And how did the Ted Lasso biscuits turn out?

I think I have to practice and get better at these-we have so much soccer going on in this house even without Ted Lasso that there are millions of opportunities to make these as a treat for after games. I’m not sure if I under-mixed or undercooked but they still were delicious-a perfect blend of butter, sugar and a pinch of salt. I tried one right out of the oven and it was a bit gooey and very satisfying too. I think my signature touch will be to add a few sprinkles on top. Not ones in the shape of soccer balls or anything. But pink crystal sugar…. and I wonder if you can make that at home too? (You can!). Next time. I now need to clean up the tornado that wrecked my kitchen before picking up the kids and heading to (can you guess it?) Soccer Practice!
