It is pretty difficult to find soufflé pancakes in Seattle and we’ve searched the area a lot. We went to Japan in 2019 and managed to get some that were pretty spectacular. (I think we’ve all seen soufflé pancakes on TikTok’s from Japan) When I was doing quarantine in my parent’s basement in Vancouver during 2020 I found out that I could order soufflé pancakes to my doorstep and there are lots of places now popping up in that area. So when I recently I saw jiggly pancakes show up in Beanfish’s instagram at Uwajimaya, I thought I better check them out too.

What are jiggly pancakes at Beanfish?

So the jiggly pancakes at Beanfish are really Japanese soufflé pancakes. They are cloud-like and airy and as their name implies they are kind of made like a traditional soufflé. They take about 15 minutes after you order them and they are definitely fluffy. They come with two bacon mini tayakis and some mini Hello Kitty shaped (scrambled?)eggs. They are a bit spendy at about $24 including the tax. But everything new in Seattle feels a little inflated lately and we were given a good-sized portion that my kids and I shared.

Souffle pancakes take at least 15 minutes usually

Having a bit of time is a good thing at a place like Uwajimaya. We put in our order and shopped and came back after 15 minutes and still had a bit of a wait. When I bring my teenagers to Uwajimaya they fill my cart with things I don’t usually pick up. They have recently discovered Indo Mie Mi Goreng instant noodles and I think the whole shelf of them ended up in my basket.

I probably could have also ordered Taiyaki at Beanfish (these are really good there too) but we also picked up too many things in the deli this time. (we bought salmon onigiri and other things and I really want to try Onibaba for the onigiri in the are next time too) And sometimes when I park at Uwajimaya and know I’m spending enough to get some validated parking I shop at some neighborhood stores too. Our Seattle Chinatown International District really needs us to help keep it thriving. Nearby we like to visit Hood Famous, the Wing Luke Museum, Chung Chun Rice Dog, Fuji Bakery, Tai Tung and Tsue Chong for unforunate fortunes and noodles.
