I was recently introduced to Del Corazón, a new brand of Latin-inspired frozen entrees and sides from Seattle-based InnovAsian. Because this is a Seattle company, I was instantly intrigued and wanted to try these products with my family. I think they are a great meal solution for busy families like mine because their entrees and sides are easy to make and delicious too so we can have something quick at home and not have to eat out or rely on takeout on busy evenings. Many of the new Del Corazón products can be made in under 10-15 minutes. I also love that many can be made in an air fryer too.
I waited so long to get an air fryer and finally caved when my cousin made us some falafel in her air fryer at a party and they were so much crispier than when I made them in my stove at home. I used the air fryer to make Del Corazón Crispy Chicken with Sweet Chipotle Sauce and the chicken was definitely crispy and delicious and my family thought it was so good. I served this with the Zesty Cilantro Lime Rice and a quick salad for an easy meal on a school night with soccer and other activities. My son made the Chicken Empanadas in the air fryer as a teenager snack before one of his soccer practices and thought they were not difficult to make and tasty as well. (This was deemed a “please get this one again, mom” meal).
We often have rice as a side in our family and it takes a long time to make, so I found the Zesty Cilantro Lime Rice convenient to make in the microwave and it only took a few minutes. One day I only had a really short time for lunch so I made myself the Chicken Adobo Rice and it was hearty and it was nice to eat something hot like this at home before I had to run off to meetings and errands. The Grilled Chicken Chipotleand Grilled Chicken Verdecould both be eaten as a main course or as part of another recipe. On the DelCorazón website Cubano sandwicheswere made with the Grilled Chicken Verde and I think having recipes like this on the website is something that is helpful too.
